Satisfy your sweet cravings with the rich taste of Sheer Khurma

There are many different ways to make Sheer Khurma, and each family has their own special recipe. However, the basic ingredients remain the same. National Vermicelli is an essential ingredient in Sheer Khurma, as they absorb the flavors and aromas of the other ingredients and give the dish its characteristic texture and taste.

To make Sheer Khurma with National Vermicelli, you will need the following ingredients:

  • National Vermicelli
  • Milk
  • Sugar
  • Cardamom
  • Almonds
  • Pistachios
  • Cashews
  • Raisins
  • Dried dates

To start, soak the vermicelli in water for a few minutes, and then drain it. In a large pan, heat some ghee or butter and add the soaked vermicelli. Fry the vermicelli until it turns golden brown, and then remove it from the pan.

In the same pan, add milk, sugar, and cardamom pods, and bring it to a boil. Once the milk starts to boil, add the fried vermicelli and let it cook on low heat for about 15-20 minutes. Stir after every 2-3 minutes to keep the vermicelli from sticking to the pan.

While the vermicelli is cooking, chop the almonds, pistachios, and cashews, and slice the dates. Once the vermicelli is cooked, add the chopped nuts, raisins, and dates, and let it cook for a few more minutes.

Finally, remove the pan from the heat and let it cool for a few minutes. Sheer Khurma can be served hot or cold, and it can be garnished with more chopped nuts and dried fruits.

That's the typical recipe for sheer khurma, but for our fitness freaks or those who are conscious about their health, it is possible to make Sheer Khurma a little healthier without compromising on taste. Here are some tips to give it a healthier twist.

  • Instead of full-fat milk opt for low-fat milk to reduce the overall calorie count.
  • Use less vermicelli in your recipe to reduce the carbohydrate content. You can also use whole wheat vermicelli instead of regular vermicelli to increase the fiber content.
  • Replace sugar with natural sweeteners like honey, stevia or brown sugar/jaggery.

By making a few simple substitutions, you can still enjoy the traditional dessert without feeling guilty.
