Ingredients
For the chicken
- Boneless skinless chicken breasts
- 4 tsp olive oil
- ½ lemon
- 2 cloves garlic
- ½ tsp. salt
- ½ tsp. black pepper
- Pinch of oregano
For the topping
- Cheese slices
- 2 Tomatoes
- 2 garlic cloves
- ½ lemon
- ½ tsp. basil leaves
- ½ tsp. salt
- ½ tsp. black pepper
Directions
This recipe requires 3 steps. First, you’ll need to marinate the chicken for 30 minutes, then grill it for about 10 minutes or until the chicken is fully done lastly you’ll need to prepare the toppings which will take approximately 5 minutes and include cheese and bruschetta topping.
Below is the step-by-step guide for making a delicious grilled chicken with the bruschetta recipe.
Marinate Chicken
- In a small bowl add 2 tsp olive oil, ½ lemon, 2 cloves chopped garlic, ½ tsp salt, ½ tsp black pepper, and a pinch of oregano.
- Give them a good mix
- Brush the mixture carefully onto the chicken breasts so that every part of it is coated
- Refrigerate the marinated chicken for at least 30 minutes
Grill Chicken
- Put a pan on low heat and add 2 tsp of olive oil
- Take out the refrigerated chicken breasts and grill them for about 5 minutes on each side
Tip:- To check if the chicken is well cooked take a knife and poke in the middle of the chicken slices. Remember the chicken shouldn’t be too hard and can be easily cut
Prepare Topping
- Top each breast slice with 1 mozzarella cheese slice and cover until cheese is melted
- For bruschetta recipe, chop 2 tomatoes, toss them with 2 minced garlic cloves, ½ lemon, ½ tsp basil leaves, ½ tsp. of salt and black pepper
